Located on remarkable clay-limestone soils, the plots that produce this Bourgogne Pinot Noir are among the finest soils in the appellation.
Production notes
Cold pre-fermentation maceration, punching down at the start and daily pumping over afterwards, vatting at 27°C for one week. Free-run juice and press juice blended.
Tasting notes
Ruby color with light garnet reflections. Notes of small tangy red fruits (redcurrant, raspberry), aromas of candied cherries and menthol. The palate is fruity and spicy (pepper) with melted tannins that give it a beautiful structure. We find cocoa, grilled notes at the end of the mouth that bring length. Pairings with beetroot salad and roast veal
