Vinification technique:
The grapes are selected, de-stemmed and left to ferment with selected native yeasts in stainless steel tanks at a controlled temperature. Maceration on the skins takes place at a relatively high temperature and is completed in about ten days. The goal is to obtain color and tannins while keeping the fruitiness alive. The wine is then stored in third passage barriques for about six months. Malolactic fermentation occurs naturally with the normal increase in temperatures in the spring following the harvest. The wine then rests in the bottle for another 4 months before being marketed.
Organoleptic description:
A brilliant wine, ruby red in color. The nose is an intense and complex wine, with notes of wild berries, rose petals and sweet spices. In the mouth, it is soft, fresh and savory, with fine and velvety tannins.
Pairing:
Particularly appropriate with game and aged cheeses. In Irpinia, its homeland, it is often drunk with grilled meats and porcini mushrooms as well as with local cured meats such as soppressata or capocollo.

Our Irpinia Aglianico Doc is produced from grapes from ancient vineyards of Tufo, with plants of 50 years of age!
With a very low yield per hectare, we produce around 6000 bottles per year.
